There’s a special moment in every hunter’s journey, that first successful hunt. Here’s a simple, delicious wild hog recipe that highlights the rich, savory flavors of wild pork. This recipe is perfect for a family meal and showcases how wild game can be transformed into a flavorful dish.

 

Slow-Cooked Wild Hog Shoulder Recipe

Ingredients:

  • 4-5 lbs wild hog shoulder (bone-in or boneless)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 1 tbsp smoked paprika
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup brown sugar
  • 1/2 cup BBQ sauce 
  • 1 can favorite beer
  • Enough water to cover shoulder
  •  

Instructions:
 

  1. Prepare the Meat: Pat the wild hog shoulder dry with paper towels and season it generously with salt, pepper, smoked paprika, cumin, and chili powder. Let the meat sit at room temperature for about 15-20 minutes to absorb the flavors.
  2. Sear the Meat: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Once hot, sear the wild hog shoulder on all sides until browned. This should take about 4-5 minutes per side. Browning locks in the flavor and gives the meat a delicious crust.
  3. Slow Cook: Transfer the seared shoulder to a slow cooker. Add the minced garlic, diced onion, apple cider vinegar, broth, and brown sugar, beer and water. Cover and cook on low for 8-10 hours, or until the meat is tender and falling apart.
  4. Finishing Touches: Once the wild hog is fully cooked and tender, you can remove the shoulder and shred the meat using two forks. If desired, mix the meat with more BBQ sauce for extra flavor. The juices from the slow cooker can also be drizzled over the shredded pork for added moisture and richness.
  5. Serve: Serve the shredded wild hog on its own or as part of sandwiches, tacos, or over rice. Garnish with fresh herbs like thyme or parsley for an added burst of flavor.
